Turkey Red Wheat

The heritage wheat that built the Great Plains.

Brought to Kansas by Mennonite settlers in the 1870s, Turkey Red fed America for half a century before modern varieties replaced it. Rich, nutty, complex flavor modern wheat simply does not have.

In the kitchen

Slightly softer gluten than modern hard red — favor gentler kneading and longer, slower fermentation.
